Food Brings Comfort

Not every event we cater is a festive affair. Sometimes, we serve at somber events like funerals and memorial services. Food brings comfort in times of grief. We were recently honored to help Mary Bem and her family in a time of need.
She wrote to use to say thank you:

"I just wanted you and your company to know personally how excellent everything was. The food was just beautiful--so clean and attractively served. Hot things were hot as they should be and the cold things cold. And, there was more than enough for everyone. I think our guests felt very well taken care of for the occassion. Eat Pray Love

The Austin-American Statesman recently held a party to celebrate the release of the movie, Eat Pray Love at the Spring Condos in Downtown Austin. The movie stars Julia Roberts and is based on a memoir written by Elizabeth Gilbert.

The story journeys through three different countries: Italy, India and Indonesia. As the exclusive caterers for this event, we got to put on our creative hats to come up with a menu that took guests on a food journey to these three faraway lands.

I can't tell you how much we appreciated the great food and wonderful service from Dagar's Catering for yesterday's event out on Lake Travis!

From unloading all the food, beverages, and set up to spending their time making sure our guests were taken well care of, Lauren and Hayden were awesome! They worked so well together and they worked hard! I was very impressed with the excellent level of service and their fun and happy personalities. They fit right in and helped make our party a success! I also appreciate their punctuality and reliability. As soon as I saw them, they had huge smiles and made it known that they were there to take good care of us.

The Ever-Growing Dagar's Team

Greetings, friends and fans of Dagar's Catering!

The past few weeks have been super busy and we are happy to report that we have added some new members to Team Dagar. As our business expands, so does our staff and we couldn't be more ecstatic about staying busy and continuing to grow in these uncertain economic times.

Just since Friday we have done a breakfast for Texas State Athletics, a high school reunion at Memory Lane for Miss Thalia Morgan, a wedding at Nature's Point, a wedding at Texas Old Town, breakfast and lunch for the State Bar of Texas, a wedding at Angel Springs, a dinner for Allied Waste and a private party at the Lakewood Community Center.

This week we have more big events lined up including several weddings, a rehearsal dinner and, of course, our monthly tasting over at DNA. We are looking forward to showing off a few of our new menu items and getting some feedback.

Additionally, we are proud to announce that we have taken on a new daily feeder at the Texas Association of School Boards. We serve breakfast and lunch at the TASBistro and provide breakfast, lunch and snacks for the Corner School, their on-site daycare center. So far it has been a big hit and we are very excited to join forces with the good people of TASB.

We served over 500 people in the span of 2 hours and had a line practically the length of the entire tent the whole time. We had a blast and everyone seemed to thoroughly enjoy the food. The most rewarding part of our job is seeing the smiles on people's faces when they bite into one of our delicious menu items. This past Sunday at the Texas Hill Country Wine & Food Fest - it was definitely all smiles!

To get everyone excited about the upcoming season and to raise money for student athletes, the Texas State Bobcats played a Spring game and held live and silent auctions at Bobcat Stadium on March 20, 2010 and we were delighted to participate!

These snapshots were taken at the Patman Wedding at Nature's Point this past Saturday. What a beautiful day for a wedding!

Everyone seemed to really enjoy themselves and, most importantly, the food! The tables looked awesome and the appetizers looked delicious, as you can see.

During cocktail hour, we served our famous Shrimp Angels and Mediterranean Stuffed Mushrooms - two of our most frequently requested hors d'oeuvres. And for dinner we served Grilled Chicken with Arugula, Black Olives and Tomatoes and our legendary Molasses Glazed Beef Tenderloin.

This was just one of seven weddings we catered over the weekend, but it was definitely the largest. Butler service for 200 guests divided between two menu options - busy night! All went very well and everyone was very pleased with the service.

Unfortunately, I forgot to bring my good camera from home for the event so the only thing I had to take pictures with was my iPhone. Not the greatest quality photos, but at least you get an idea of the set-up.

The top tray has Crab-Coconut Cocktail Shooters, the middle tray is Lobster-Avocado Cocktail Shooters and Shrimp-Tomatillo Cocktail Shooters, and the bottom tray is our famous Reuben Puffs. Basically a Reuben sandwich in a warm, flaky pastry. Delicious!

We also had a carving station with Molasses Glazed Beef Tenderloin & Garlic Horseradish Sauce served up in warm Vienna Rolls. Everything was a big hit!

It was our first time to try out the new seafood shooters and they were a soaring success! We are excited to be adding new things to the ever-growing menu here at Dagar's Catering.

This weekend is going to be a doozy! Weddings galore! We are catering ten events in two days!

That's right, it's wedding season! As we move into the Spring and the warmer weather, we are going to be up to our necks in nuptials and we wouldn't want it any other way!

February Tasting: Success!!

This week we visited The Vineyard at Florence in Florence, Texas. The property is beautiful and it was nice to finally see it finished. We had visited before when it was still being re-vamped. Check out their website (link above) to see some more great photos and learn more about the venue.

50 Ways to Cut Wedding Catering Costs by Bridal Guide Magazine

Click on the link above to see some easy ways to cut catering costs and still have a stylish, classy wedding with great food.

Here are a few of our favorites points:

1. Hand pass pricier appetizers, like shrimp, scallops or other seafood items, rather than setting them out for guests to serve themselves. Caterers say guests consume 40 percent fewer pieces this way.

5. Just because you’re on a budget doesn’t mean your crudités have to show it. Instead of carrot sticks and cucumber rounds, choose artichoke hearts, broccoli flowers, radishes cut in heart shapes or other creative choices, with flavored dipping sauces.

8. Offer theme stations, such as a fajita station or Thai station. “The Asian station, where it’s more about the display, is very popular now,” Tertner says. “We set out large woks or serve food in take-out containers that coordinate with the wedding’s theme or colors. We also create pyramids of basmati and jasmine rice, lots of egg noodles and a range of condiments. These ingredients are not costly, but it looks as though you’ve invested a lot.”

9. Skip the raw bar—trendy but one of the most exorbitant kinds of stations. Instead, Miller suggests a hand-passed hors d’oeuvre, like tequila-cured salmon served in martini glasses.

12. In cool weather, serve mini cups of clam chowder (again, you’re serving seafood at a minimal price), lobster bisque, acorn squash, or any other flavors that are easy on the wallet.

23. Serve a delicious vegetarian entrée. Even nonvegetarians may appreciate this choice simply because it’s different from what’s usually on offer at weddings.

28. Dressing up your vegetable dishes does a lot to make them look expensive: Fan out mini carrots and use chives to tie together servings of asparagus.

32. If you design a tasting menu of seven or eight small courses instead of four big ones, you’ll save about 15 percent.

39. Skip the champagne for your wedding toast. Guests can toast you with the drinks they have in hand. Or look into serving easily available sparkling wines from France (cremant), Spain (cava) or Italy (prosecco) instead.

47. Do you really need a chocolate fountain and flaming bananas? There’s no need to pay extra for “entertainment” desserts (your guests will have plenty of fun anyway).

49. Go bite-size with desserts, like tiny chocolate-covered cheesecakes. By controlling portions, you’re saving one-third the price of a full dessert buffet.

Before you sign on the dotted line, make sure you get answers to the following questions:

Are you state-licensed? Do you have liability insurance and a valid liquor license?
How long have you been in business in this area?
Are you affiliated with any professional groups or societies?
May I have a list of recent references to check?
Must we pay for a set minimum number of meals no matter how many guests show up?
How much leeway do you give over the final head count? Will you be able to make a few extra or fewer meals if we have last-minute guests or no-shows?
Will we be able to sample your food? See the linens/china you plan to use before the event? May we visit a wedding in a similar style to ours during the setup time?

These guys know what they're talking about when it comes to carefully choosing a caterer for your wedding. We at Dagar's especially agree with the following paragraph:

"Food tastings are a thing of the past Many couples usually book a caterer far in advance, are tied to a binding contract and then do the taste test as a formality. “The food will be perfect at a tasting. You’re only cooking for two, so of course it’s going to be pretty,” says Robert. “The proof is when you have to serve 300 people with six different courses and it all has to be done in an hour and everything has to be perfect.” So before your tasting, be sure to talk to the caterers, meet the owners, research their reputation and make sure they can deliver the food you want."

Dagar's General Manager Kathryn Dagar-Albarado advises people of this constantly - it's hard for us to cook for two people, but we sure can cook for a thousand!

The apple idea and catering were a huge hit. I have had comments from those who dipped and those who did not say it was super classy and delicious. They liked the catering staff and said they were very friendly and polite, helpful, etc…. I also think everyone liked that it was something different.

Congratulations to Lauren & Brian! They were married last weekend in a gorgeous Tiffany Blue Nature's Point ceremony and reception.

Their wedding feast featured all kinds of tasty faves -- field greens with grilled peaches, molasses glazed beef tenderloin, goat cheese & caramelized onion mashed potatoes + more. Their cake was an amazing creation from Simon Lee and their favors were caramel apples. Delish!

2009 Austin Settings

We love Austin Settings! It's such a fun -- and worthwhile -- fundraising event to be a part of. If you aren't familiar with Austin Settings, it's an annual fundraising effort organized by the Kappa Kappa Gamma Alumnae Association and it benefits the Dell Children's Medical Center.

We've been involved for the past few years and love to see all the table designs that our industry peers create. Such wonderful work!

Dagar's Catering wants to wish everybody a Happy New Year.

We are so excited about the upcoming year. We have so much planned to better serve the Austin area. There are several venues that we have acquired the privilege of serving over the past year and for the 2009 year. The first being Laguna Gloria. We had a great start to catering for this great venue. We plan on making the next year better. The other venue is Nature's Point in Lago Vista. What a great location. The views are worth the drive for your guest. Check them out if you want privacy and lake view. The other venue that we have established a relationship with is Texas Old Town in Kyle. Great venue for the "Texas Wedding".

Dagar's has created some new menu options that will catch the eyes and make your taste buds scream for joy. Look for those on our website and emails.

We will also be pride ourselves on serving pieces and displaying. Presentation as well as food quality is important in what we can provide for every special event.

Holiday Season

We are more then half way through our HolidaySeason. It has been a great season for Dagar's. We have continued to serve old Customers such as the State Bar of Texas and Lucein Sterling and Gray while also picking up new customers like Newgistic and CCIM. We are excited with the growth of Dagar's Catering. There is one more big push next week. Then we are taking a week off for Christmas. My staff deserves every bit of the break they are going to receive.

Texas Old Town

Dagar's Catering is exited about our new partnership with Texas Old Town in Kyle. We have teamed up to create fantastic events. At this point Texas Old Town offers mainly BBQ receptions but with Dagar's aboard the sky is the limit. There are three different buildings that you can hold your event in plus ceremony areas. It is a neat location and we are excited to get the ball rolling.
